Homemade Cottage Cheese

Ingredients

  • 1 gallon whole milk

  • 3/4 cup white vinegar or lemon juice

  • 1 tsp salt (optional)

  • 1/2 cup heavy cream or milk (optional, for creamier texture)

Instructions

  1. Heat the milk
    Pour the milk into a large pot and heat slowly to about 190°F (88°C), stirring occasionally so it doesn’t scorch.

  2. Add acid
    Remove from heat and stir in the vinegar or lemon juice. Let sit for 5–10 minutes. The milk will separate into curds and whey.

  3. Drain
    Pour the mixture through a cheesecloth-lined colander. Let drain for 5–15 minutes depending on how moist you want the cottage cheese.

  4. Rinse (optional)
    Rinse the curds gently with cool water for a milder flavor.

  5. Season
    Stir in salt and cream if desired.

  6. Chill and serve
    Refrigerate for at least 1 hour before eating.
